Slice-and-Bake Cookies



I just tried out a recipe from Cook's Country today that was a hit. They are ridiculously easy to make. They're rather "plain jane" looking, but the great shortbread taste makes up for it.

1/3 c. granulated sugar
2 T. light brown sugar
1/2 teaspoon salt
12 T. unsalted butter, cut into pieces and softened
2 t. vanilla
1 large egg yok
1 1/2 c. all-purpose flour

1. Process sugars and salt in food processor until no lumps remain from the brown sugar.

2. Add butter, vanilla, and yolk until creamy.

3. Add flour and pulse until firm dough forms.

4. Turn out dough onto floured surface and roll into 10 inch log.
Wrap tightly with plastic and refrigerate until firm (about 2 hours or up to 3 days).

5. Line baking sheets with parchment paper. Slice chilled dough into 1/4 in. rounds and place 1 inch apart on sheets.

6. Bake until golden brown (about 15 min.)
Let cool 10 min. then transfer to wire rack.

7. Finally, make a great cup of coffee and eat a few cookies before the kids eat them all. :)
