I had an intense craving for chocolate chip cookies today. I generally love baking, but I don't like to have my oven on for long periods of time during a hot summer day. If I make a decent sized batch of cookies, my oven would be on for at least 1 1/2 - 2 hours (which makes quite the impact in our tiny, un-air conditioned home). I stumbled across this recipe which required my oven to only be on for 30 minutes. I love how they turned out, and they're a little bit healthier than my favorite chocolate chip cookie recipe too.
INGREDIENTS:
3 cups old-fashioned oats (add more oats if you like a drier/crunchier bar)
1 cup all-purpose flour
2/3 cup butter or margarine, softened
1/2 cup honey
1/3 cup packed brown sugar
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1 cup butterscotch chips
DIRECTIONS:
In a mixing bowl, combine the first seven ingredients; mix well.

Stir in chips. Press into a greased 13-in. x 9-in. x 2-in. baking pan.
Bake at 325 degrees F for 18-22 minutes or until golden brown.
Cool for 10 minutes; cut into bars. Cool completely in the pan.
