Shredded Chicken Recipe

I'm one of those cooks that's constantly browsing the Internet for new recipes or trying to find recipes for the ingredients that are left-over in my kitchen. I have my computer located in my kitchen area right now, so it's very convenient to quick print off a recipe when I need it. I'm especially always trying new Mexican meals. I had a girl's night tonight and we made giant burritos with shredded chicken, black beans, salsa, sour cream, and cheese. The following recipe for shredded chicken is absolutely delicious!

Shredded Chicken for Enchiladas, Tostadas, Tacos...

4 boneless chicken breast halves
1/2 medium onion, sliced
2 garlic cloves, smashed
1 tablespoon salt
water
2 tablespoons butter
1 garlic clove, minced
1/2 medium onion, chopped
1 medium tomato, seeded and chopped
1/2 green bell pepper, chopped
1 teaspoon fresh coarse ground black pepper
1 teaspoon marjoram
1/4 cup cilantro, chopped (or to taste)
1 1/2 teaspoons ground cumin
2 tablespoons tomato sauce
1 1/2 teaspoons salt (to taste)

Place first four ingredients in a pot with enough water to cover.
Bring to a slow boil, cover and simmer until done, about 20-30 minutes.
Remove from pot and let cool and shred.

In a large pan, melt butter over low heat. Add all remaining ingredients, except tomato sauce and salt. Sauté until soft, about 10 minutes. Stir in shredded chicken and briefly sauté.
Add tomato sauce. Salt to taste.
